This was completely unintentional but I took another weeklong break from my COVID update posts. It’s not my intention to turn this into a bi-weekly series, but it seems that it may shake out that way from time to time.
Getting into what life has unfolded over the past few weeks, I’ve recently developed a s’mores obsession. It’s summer time so it feels appropriate. On lazy days when I don’t feel like firing up the grill to roast my marshmallows I just stick 2 in a small dish and throw them in the toaster over for a few minutes. It works perfectly!
The garden is still going wild. I’m now the proud owner of more cherry tomatoes than any one person could ever need in their life. In a pre-COVID world I would have taken some to work to share with my coworkers. In the current world, I’m committing to eating cherry tomatoes every single day in order to prevent wasting them. We shall see how it goes. We’ve also had an excess of cucumbers so over the weekend we make pickles. For our first time attempting cucumber pickles I think they came out pretty good.
While we’re on the topic of the garden, our Chinese 5 color pepper plant has recently had its first pepper transition to yellow. It’s so exciting to finally see the color changes happening.
The most exciting update I have to share is that I’m typing this post up on my new MacBook Pro. Austin finally convinced me it was time to update my computer (aka he got tired of me whining about my old laptop). My previous computer was 9 years old so it was certainly time to move on. I’m really loving it so far!
A couple weekends ago we ventured out of the house to Great Sage, which is one of our favorite vegan restaurants. Its 40 minutes from our house so we sat in the parking lot to eat our food while it was still warm. I had the Mac & cheese which was so amazing. It was so nice to get out of the house and have a little date, even if it was in a parking lot.
My thoughts in summary on this week:
1. The weather has been gorgeous lately and I haven’t been sitting outside so I’m making the declaration to do that more starting now.
2. We are still very into farmers market green beans and we’ve also been loving cantaloupe from the same vendor.
3. I ordered a new vegan leather jacket and I can’t wait to share it with y’all.
4. I stopped procrastinating and finally posted a bunch of new things on my Poshmark page.
