Super Versatile Granola Recipe

Today I want to share my absolute favorite granola recipe with you guys. This recipe is great because it’s so versatile. You can add your favorite nuts, fruit, and nearly anything you have sitting around the pantry. This is a fool-proof combination that you’ll surely be making over and over again. I combine my granola with sliced banana and soy milk to create a healthy vegan breakfast cereal. You could also use it to top ice cream or waffles for a bit of added crunch. 

Ingredients:

  • 2 cups of rolled oats
  • 1 cup of almonds
  • 1 cup of secondary nuts, I prefer pecans
  • 1/2 cup of puree, I think pumpkin, apple, and banana would work best
  • 1/4 cup of coconut sugar
  • 1/4 cup of maple syrup
  • 1 teaspoon of pumpkin spice or eyeball your favorite warm spices
  • Optional: cacao nibs, hemp seeds, chia seeds, flax seeds, goji berries, raisins, craisins, pumpkin seeds, or whatever other wonderful hippy goods you have lying around your pantry

Preheat your oven to 250℉. Add all ingredients to a bowl and stir well until moist ingredients are evenly distributed. Line a baking sheet with parchment paper. Evenly distribute the mixture on the parchment paper lined tray. Bake for 1.5 hours, taking the tray out of the oven every 30 minutes to toss the mixture. This will help to achieve the most even bake and prevent burning. Store in an airtight container.
